Welcome to “Where’s the Tofu?”!

Thank you for visiting my blog all of you lovely people! I’m very excited to begin utilizing my creative juices to document my journey to Ironman on a plant-based lifestyle. The purpose of this blog is to summarize my training, provide race reports, show recipes with photos, and hopefully dispel the myth that vegans are weak and only eat granola! By the way, the term “vegan” sends shivers up my spine, so I will often use “plant-based” as an alternative. This blog is for anyone — for my friends and family to follow along, for triathletes looking to incorporate more healthy plants into their diet, or vegans looking to accomplish an athletic goal.

If you’re wondering why on Earth I would want to eat only plants (no meat, no dairy, no animal products of any kind) I encourage you to read this wonderfully-written article “Why Everyone Should Eat More Plants” by Rich Roll. I want this to be an open forum, so please comment with any recommendations, suggestions, or feedback.
