Hi I’m Carolyn Bollozos! I’m an Ironman triathlete and trail runner living that plant-based life. I’m a San Francisco resident, midwest girl at heart, animal lover, Michigan football fan, videogame nerd, mom-to-be and plant-based “chef-in-progress”. My goal is to completely transform my lifestyle from a once “junk food vegetarian” to a healthy, thriving, plant-based Ironman triathlete, and hopefully inspire others to eat more plants and move their booty!
About the Blog
I wasn’t even born yet when the famous Wendy’s commercial “Where’s the Beef?” first aired in 1984. But there’s no denying that it’s a cultural phenomenon in the food marketing world. Who hasn’t heard this ubiquitous tagline before? In case you haven’t, take 30 seconds to watch the clip:
But it’s 2018 and beef is out and plants are in. Instead of asking “where’s the beef?”, more and more people are seeking out plant-based alternatives such as almond milk, tofu, and coconut ice cream!
I have 20+ years of meat-free living under my belt, and about 9 years of endurance athletics (marathons, century bike rides, and triathlons). This blog details my Ironman and ultra marathon training complete with plant-based recipes, race reports, and links to articles.
